Inside The Edison’s New Brunch Experience at Disney Springs

Weekend brunch has officially arrived at The Edison at Disney Springs, offering guests a new way to experience the restaurant’s signature blend of elevated comfort food, handcrafted cocktails, and live entertainment.

Available every Saturday and Sunday from 11:30 a.m. to 3 p.m., The Edison’s new brunch menu transforms the venue into a destination for leisurely weekend dining. Known for its distinctive steampunk aesthetic, the restaurant combines industrial elements with the glamour of the 1920s, creating an atmosphere that feels like a different time period. 

The expansive dining room is filled with vintage-inspired details, an exposed brick bar, and brass accents that transport guests to another era. During a recent hosted preview of the new brunch offering, we experienced a menu with a mix of brunch staples and signature dishes.

The meal began with appetizers: DB “Clothesline” Candied Bacon and the Sticky Monkey Bread. The candied bacon arrived hanging from a miniature clothesline, offering a memorable presentation to go with its flavor. Thick-cut strips glazed with maple and black pepper were paired with sweet-and-spicy pickles.

The Sticky Monkey Bread is a house-made apple-cinnamon brioche pull-apart served with toffee caramel sauce drizzled generously. 

Among the entrees sampled was the Avocado Toast, a fresh and satisfying option featuring an oversized slice of sourdough topped with avocado, two fried eggs, arugula, pickled onions, and white balsamic. 

Then, for those with a sweet tooth, the French Toast delivered comfort-food appeal with an elevated twist. Prepared bread pudding-style and butter-griddled, topped with strawberries and cream for a brunch treat. 

The standout dish of the morning, however, was The Early Bird. served on a large, house-made biscuit, the sandwich layered with buttermilk fried chicken soaked in cherry maple syrup with crispy bacon and a fried egg. The combination of savory and sweet made it a memorable offering on the menu.

Additionally, the live music started as soon as the restaurant opened, adding to the ambiance. The singer was accompanied by an acoustic guitar performed from within the dining area, creating an intimate soundtrack for the day. The setlist featured unexpected renditions of contemporary favorites, including Chappell Roan’s “Pink Pony Club” and Radiohead’s “Karma Police,” encouraging guests to settle in and savor the experience. 

The Edison is also introducing a lineup of brunch-inspired cocktails. Guests can sip on the Piggyback Maple Old-Fashioned, made with WhistlePig PiggyBack bourbon, maple syrup, and pecan liquor with a bacon garnish. The restaurant also offers a Bloody Mary crafted with Grey Goose vodka and topped with bacon, blue cheese olives, and gem lettuce. For those seeking a lighter option, mimosas are available with orange, pineapple, grapefruit, or watermelon juice. 

From the first notes of live music to the last bite of monkey bread, The Edison’s weekend brunch delivers a spirited addition to Disney Springs’ culinary scene. For guests looking to elevate their next weekend outing, it may be worth setting the alarm for.
