Mission Resort + Club, operated by MMI Hotel Group, has officially opened Conquistador Bar & Restaurant, a dining experience that blends heritage, hospitality, and modern culinary creativity in Lake County’s Hill Country.
Located within the resort, Conquistador represents the evolution of two dining spaces–La Margarita and El Conquistador–now unified into a single restaurant and bar. The transformation was guided by guest and member feedback, resulting in a more spacious layout, including a doubled bar size and an open floor plan that encourages conversation.
“This project was all about honoring our history while making the experience even better for the people who come here week after week,” said Cindy Staley, General Manager of Mission Resort + Club. “We listened closely to our guests and members, and that shaped everything—from combining the two restaurants into one to creating a space that feels just as comfortable for a quick drink as it does for a special night out.”
An Experience Inspired by History and Florida
Mission Resort + Club partnered with Interior Image Group (IIG) to bring Conquistador’s new vision to life. The design pays homage to the resort’s Spanish-Colonial roots and the legacy of Howey-in-the-Hills founder William J. Howey, while embracing a fresh, contemporary aesthetic.
Handcrafted tilework, warm wood tones, cowhide accents, and subtle metallic details nod to the idea of buried treasure without feeling literal. A sunrise-inspired color palette and abundant greenery soften the space, creating a layered, tactile environment.
With 164 total seats, including an outdoor dining area, Conquistador is designed to serve as a true gathering place for resort guests, members, and local residents alike.
The culinary program at Conquistador mirrors the spirit of its design, being adventurous, inspired, and rooted in location.
The menu blends Spanish influences with fresh Floridian ingredients, encouraging guests to explore, share, and savor a variety of dishes. Standout offerings include:

- Lobster Fritas
- Braised Short Rib
The cocktails take a global approach, featuring citrus-forward and spice-driven drinks alongside a large selection of Florida craft beers and domestic brews. Thoughtfully crafted mocktails ensure that all guests can enjoy a sophisticated beverage experience.
Valentine’s Day Weekend
Just in time for this weekend, Conquistador will offer a limited-time chef’s feature menu for Valentine’s Day weekend on Friday, Feb. 13, and Saturday, Feb. 14.
Guests can indulge in dishes such as:
- Lobster Bisque with cognac cream
- Filet Oscar with jumbo lump crab and béarnaise
- Lobster Champagne Risotto
Dessert highlights include Red Velvet Cheesecake and a dark chocolate marquise with raspberry coulis. Reservations are recommended via OpenTable.
Conquistador Bar & Restaurant is now open:
- Lunch: Tuesday – Saturday, 11:00 a.m. – 4:00 p.m.
- Dinner: Sunday – Thursday, 5:00 p.m. – 10:00 p.m.
- Friday – Saturday until 11:00 p.m.
