Ceiba at Conrad Orlando Expands Bar Takeover Series with Global Talent and Fall/Winter Cocktail Collaborations

Ceiba, the signature rooftop Mexican restaurant and bar atop Conrad Orlando at Evermore, is expanding its acclaimed bar takeover series this fall and winter, introducing one-of-a-kind cocktail experiences that blend world-class mixology with local flavor.

The exclusive series invites locals, visitors, and hotel guests to experience collaborative events featuring internationally recognized bartenders, leading spirit brands, and Orlando’s own growing cocktail community.

Curated by Ceiba General Manager and cocktail expert Rob Colomb, the series continues to highlight the restaurant’s agave-forward bar program while showcasing a variety of celebrated spirits, including whiskey, gin, and vodka.

“We’re excited to expand Ceiba’s reach by partnering with some of the best bartenders, spirit makers, and brightest industry leaders across the country and beyond,” Colomb said. “Whether welcoming their incredible talent to Orlando or taking our agave expertise on the road, each collaboration offers guests a chance to discover creative, expertly prepared cocktails and enjoy an extraordinary night out.”

Since its opening last year, Ceiba has established a reputation as one of Orlando’s premier destinations for authentic Mexican cuisine and expertly crafted cocktails. The rooftop venue features more than 300 premium agave selections and six curated tasting experiences, including tequila, mezcal, raicilla, sotol, and bacanora. This deep-rooted commitment to agave culture and education forms the foundation of Ceiba’s collaborative programming.

Each bar takeover event is open to the public, with no reservations required, offering a unique opportunity for guests to engage with visiting mixologists and sample inventive cocktails in a lively rooftop atmosphere.

Friday, October 10 – Breast Cancer Awareness Night with Bar Brujas (Mexico City) featuring Casa Dragones
Ceiba welcomes Mexico City’s all-female team from Bar Brujas to launch Breast Cancer Awareness Month. Hosted by Casa Dragones, the evening will debut the brand’s newest release, with signature cocktails by Bianca “Pipa” Bertoli, one of Mexico’s top bar talents. Tickets are $15, including a cocktail and an exclusive Casa Dragones pour, with proceeds benefiting the National Breast Cancer Foundation, Inc. (NBCF).

Tuesday, October 14 – Off-Site Collaboration with Sexy Fish (Miami) featuring Mijenta Tequila
Ceiba takes its agave expertise on the road for a special night at Miami’s Sexy Fish, featuring a bold, agave-driven cocktail menu blending Ceiba’s Mexican flair with Sexy Fish’s iconic style.

Friday, October 17 – Breast Cancer Awareness Night with Courtney Lane featuring ATIAN Rose Gin
Acclaimed mixologist Courtney Lane will showcase South Africa’s ATIAN Rose Gin with an evening of premium gin-based cocktails. $5 from each drink will support NBCF.

Friday, October 24 – Breast Cancer Awareness Night with Natasha Sofia, Global Advocacy Director, Mijenta Tequila
Natasha Sofia, a respected figure in the tequila industry and champion of sustainability and women’s empowerment, joins Ceiba for a tequila-focused evening. $5 from each cocktail will be donated to NBCF.

Saturday, November 1 – Día De Los Muertos Celebration with Swizzle Rum Bar & Drinkery (Miami) featuring The Lost Explorer Mezcal
A festive tribute to Día de los Muertos, this event features guest bartenders from Miami’s Swizzle Rum Bar & Drinkery, recently listed among North America’s 50 Best Bars. Guests can vote for their favorite themed cocktail to appear on Ceiba’s November menu. The evening will include tarot readings, immersive décor, and live entertainment.

Wednesday, November 12 – Bar Crawl Extravaganza with Hendrick’s and Milagro Tequila
Ceiba will host a multi-stop bar crawl experience across its rooftop space, featuring three guest bar stations. Each stop earns guests a stamp, and $5 per cocktail will go to the BASE Camp Children’s Cancer Foundation, part of Conrad Orlando’s annual charitable initiative.

Wednesday, December 17 – Off-Site Ceiba Takeover at Swizzle Rum Bar & Drinkery with Rockey’s Liqueur
Ceiba closes the year with a return visit to Miami’s Swizzle Rum Bar & Drinkery, joining forces with managing partner Jesús Perez, Rockey’s Liqueur, and other premium brands for a finale night of inventive cocktails and showmanship.

Through these immersive experiences, Ceiba continues to honor Mexico’s rich spirits heritage while fostering international collaboration and innovation in cocktail culture. The series further establishes Ceiba and Orlando as key destinations for modern mixology and culinary artistry.
