Nami, the MICHELIN-recommended restaurant at Lake Nona Wave Hotel, has unveiled an array of new plates, desserts, and a fall-inspired signature cocktail. Building on its recognition in the 2025 MICHELIN Guide Florida, Culinary Director Freddy Money and Executive Chef Jason Beliveau continue to refine the restaurant’s modern Japanese approach with innovative dishes that merge precise technique and global influences.
The refreshed menu introduces vibrant crudos, inventive share-style selections, and creative desserts. Highlights include Cured Salmon ($23) with crème fraîche and brioche croutons, and the Madai ($24) with miso-lime and blue basil. Guests also have the option to add caviar for an elevated touch.
From the share-style offerings, the Nami Wedge ($19) reimagines a classic with smoked bacon and a tomato wafu dressing, while the Hokkaido Scallops ($32) balance brightness with buttermilk and ginger. Larger plates feature indulgent options such as Lobster ($120) with smoked chili, fried rice, and jidori egg, and Yakitori Chicken Wings ($22) enhanced with Yuzu Kosho, Charred Scallion Aioli, and a Tare glaze made from the chicken’s own bones for added depth.
Dessert selections ($15) bring comfort and creativity, including a Koshihikari Rice Pudding with red berries and almonds, and the Tropical Fruit Vacherin, a layered presentation of seasonal tropical fruits.
To pair with the new dishes, Nami is introducing the Harvest Old Fashioned ($24), crafted with Colonel E.H. Taylor Small Batch Bourbon, apple bitters, cardamom, and a Luxardo cherry. The cocktail offers a spiced, autumnal note that complements the restaurant’s balance of flavor and artistry.
“Our inspiration for this new menu came from the desire to create moments that stay with our guests
long after the meal,” Freddy Money, Tavistock Restaurant Collection culinary director said in a press release. “Each plate and cocktail is crafted to engage the senses and transform dining into a memorable experience. It’s not just about flavor; it’s about the artistry and feeling behind every bite.”
